Mussels for Muscle

One of my ex bfs was really into working out. He had a lot of nicknames but one in HS that stuck was Gucci. Since there is not a Gucci food, I picked mussels.

So easy and super inexpensive, they are usually about $1.99 a lb.

Here’s what you need –

1 lb of mussels, discard any that are open, rinse them in a collinder don’t let them sit in water though

3 cloves of garlic, chopped

2 cups of white wine, I like a pinot grigio, make sure you use a wine you also like to drink!

2 chopped scallions, white and green parts

2 tablespoons of butter

Extra virgin olive oil

Salt and Pepper

So simple.  In a large sauce pan, heat about a tablespoon of extra virgin olive oil and two tablespoons of butter.  Add garlic and scallions, season with salt and pepper.  Once garlic starts to turn brown add mussels.  Toss to coat and season as needed with salt and pepper.  Deglaze with wine.  This creates a lot of delicious broth so suggested serving accoutrement is a crusty baguette. Cover the pan and let the mussels cook!  It only takes about 5 – 7 minutes.  The mussels will open and take in all that delicious flavor.

Serve hot with bread and a glass of wine and enjoy! C’est si yum!
