Green Beans and Orecchiette in Herb-Pepper Alfredo Sauce

So simple and quick to make! If you don’t have Orecchiette you ca use elbows or ziti. Perfect for two or one with leftovers.

2 cups of frozen green beans, I love Trader Joe’s
1/2 cup of alfredo sauce, I opted for Ragu low fat
2 TBS shredded pecorino romano cheese or Parm
2 TBS herbs de provence
1/3 cup of white wine, I had Riesling
1 clove garlic, chopped
3 Cups of orecchiette (adjust if you need more or less)
2 TBS of butter
1 TBS of Balsamic vinegar

Cook pasta according to the directions, don’t forget to salt the water. In a sauce pan saute garlic with 1 TBS of butter. Make sure it doesn’t burn. Pour sauce wine over the garlic and butter and whisk in the alfredo sauce. Season with herbs and set aside. Drain pasta water and pour some into the pot. Cook green beans and season with salt and pepper, add balsamic vinegar. Toss with pasta. Add sauce. Serve hot and enjoy! C’est si Yum.


Crock Pot Experiment

It’s been a while. I recently got my first slow cooker. I also defrosted some chicken breasts and had no clue what to do with them. Here is what I put in the slow cooker three hours ago. They are all items that I found in my fridge or pantry…I can’t tell you if it’s good or not yet but will suggest serving it over white rice, brown rice or some sort of noodle!!

2 chicken breasts – I chopped them into pieces but I don’t think you have to
1/2 cup of baby carrots chopped in half
2 cloves of garlic, minced
salt and pepper
1/2 cup of white zin I had open and needed to use
1 can of cream of mushroom soup
1 green onion, chopped
1/3 cup of OJ
2 teaspoons of herbs de provence
1/2 cup of mushrooms

Throw it all in the slow cooker! Four – five hours and serve over rice or noodles!
