Chicken Divan

I don’t have a ton of casseroles in my recipe book but Chicken Divan is definitely a dish of my childhood. It’s so simple and easy and if you have leftover rotisserie chicken you can use it instead of cooking off chicken breasts!

IngredientsWhat you need:

2 cups of frozen of fresh broccoli, chopped (I like a lot of broccoli in this dish, you could definitely do less if you don’t love it)

1 cup of low fat sour cream

1 can of cream of chicken soup

1 cup shredded cheese, with extra for sprinkling on top

13 crackers or so crumbled up

3 chicken breasts, cooked and chopped

salt and pepper

1 cup of rice, cooked (brown or white)

Preheat oven to 375 degrees. Combine the soup, cheese, chopped chicken and season a bit with salt and pepper. Set aside.

Chicken Breasts Side note, cooked (boiled in this case) chicken is not appealing looking at ALL.

Chicken Mixtop with chicken mixture, crackers and cheese.

Bake for 25 – 30 minutes until the top is brown. Serve warm! I also enjoy this as a leftover and reheated. C’est si yum! baked
