Spaghetti Squash

I love spaghetti squash. I am however not a believer that spaghetti squash replaces spaghetti but I do think it would work as a side if you are looking to do two veggies vs. a veggie and a starch.

Preheat oven to 400 degrees.

Cut the spaghetti squash in half, lengthwise like so:

Remove the seeds with a fork. Season with salt and pepper and drizzle with some extra virgin olive oil. Place “face” down on tin foil (I still spray the tin foil to make sure it didn’t stick) and wrap.

Bake for 25 – 30 minutes. You’ll know when it is ready when you can press the squash down and it gives easily (careful it will be hot). Remove from the oven and use a fork to scrape the squash out.

I recommend seasoning with a little more salt when it comes out. You can make it sweet with honey or savory with a harder cheese like Parmesan. Serve hot! C’est si yum!
