Homemade Veggie Burger

So I love veggie burgers. I tried this recipe from BettyCrocker.com.

I adjusted Betty’s recipe a bit. What I used:

1 can of wax beans, drained and rinsed

1 garlic clove

Salt and Pepper

Shredded Parmesan Cheese

1/2 a cup of fresh kale (no stems) OR some frozen spinach

3/4 cup of breadcrumbs (I would also use some brown rice and use 1/2 a cup of breadcrumbs)

Combine all ingredients, mash so that the wax beans. It will look unattractive.

Heat a pan and coat with nonstick cooking spray. Form into patties and brown on either side. I was making them in batches so I kept them in a heated oven (I had something else in the oven so it happened to be at 385 degrees).

Serve warm with some goat cheese. 

C’est si yum!
