Eggplant Fries Take 2!

I have no eggs. Not only that, I have no bread crumbs. What do I have?

Breadcrumbs –
I took leftover baguette slices, chopped them in one of my favorite kitchen tools, a pink cuisinart food processor (a gift from my Daddy). Simply season them with pepper, a pinch of garlic salt and some extra virgin olive oil. Voila! Breadcrumbs!

Ok, now that that is all set, here’s what you need for these.

1 Eggplant, cut in to 2 inch “fry” shapes

2 Garlic cloves, chopped

1/3 Cup of Olive Oil Mayo

Extra virgin olive oil

Ground pepper

Breadcrumbs

Preheat oven to 385 degrees. Line a baking sheet with tin foil and spray with non-stick cooking spray. In a bowl, swirl some extra virgin olive oil, jut a couple of tablespoons. Mix in the extra virgin olive oil mayo and season with pepper. It should make a smooth but not liquidy base to coat your eggplant in. Split the mixture. Toss 1/2 the eggplant fries in so that it is all covered. Then pour in 1/2 cup of breadcrumbs. Total, you will probably use 1 cup of breadcrumbs. Place them on the baking sheet and bake for 15 – 20 minutes. I recommend turning the baking sheet halfway through. Serve warm with your favorite dipping sauce!
