Breakfast!

Having an 8 a.m. meeting equals being on-site at at least 7:30 a.m. This morning, one of my colleagues decided to make breakfast pizza. It had everything, eggs, bacon, ham, cheese and since we don’t serve hashbrowns in a sports bar, french fries. I even saw him brush the whole thing down with butter…

As delicious as it was, not everyone has the time or the metabolism for that matter to eat that “on the go” or “in the rush” as I often am when heading out for work. Here’s a light and delicious recipe for breakfast pizza. This is again on an english muffin but as my previous blog stated, “Not Everything has to be Fancy.”

1 English Muffin, I love this light whole grain type from Thomas’ English Muffins
2 Egg Whites
1 TBS Parmesan cheese or shredded Italian blend <– any shredded cheese works!
salt
pepper
pinch of Herbs de Provence

This recipe can also be a quick sandwich if you're in the rush, simply cook the egg whites in an "omlette fashion" fold over with cheese in the middle and sandwich between your English Muffin! Make sure you don't let your pan get too hot or your eggs will burn. You want it to cook low and slow.
