Plantain Chips

I remember when I was a Girl Scout making fat fried plantains. So simple and salty. The only problem I had making them when I was older was smashing them. I dropped more on the floor than in the oil. To simplify, here’s a quick and yummy recipe for thin plantain chips. Enjoy!

What you need:
2 Plantains
Canola Oil
Salt and Pepper
Cajun Seasoning (like Tony’s) Optional

If you have a mandolin slice the plantains into about 1/8 of an inch slices. If you do not, you can do it by hand. Fry until the chips float and transfer to a paper towel to drain. Toss in salt, pepper and Tony’s while it is warm. Enjoy!
